Vegetarian Meal Planning - HELP!!

I offered to be the meal planner for an upcoming Grand Canyon trek. Everyone is gung ho about the FBC. One guy gave me the "No Meat" :o and "no heavy sauces" :o guideline. I don't want to change the meals I have planned, but would like to adapt the meals for a vegetarian. Does anyone know the substitution ratio for TVP or dried Tofu in the meals that use meat? Any other suggestions?

A bag of horse oats and some grass or hay :lol: :lol: or eat on the way :lol: :lol: Just buy some can beans and corn dry them for him.

Peanut butter cookies and rehydrated powdered milk :) (That's for dessert)

Dehydrated eggs for the main course (scrambled) I like eggs

Sorry, can't help on the tofu and TVP

With TVP, start gently on it ;) Or put them in a tent by themselves :lol:
I usually use about 1-2 Tablespoons of it per person. The flavored TVP is what you want over plain. Have you taken a look at Harmony House Foods yet? They sell lots of precooked beans and the TVP.
I have used them in many recipes :)
I have a number of veg recipes up on the site, my second book (that -cough wheeze- might someday be done) has a lot more of them. I don't mind sharing them with you though!
